Certified Kobe Beef 01
Signature Ingredient

Certified Kobe Beef

The best beef in the world | RAI is one of just 12 restaurants in the entire UK certified to serve genuine Japanese Kobe beef | remarkably low-fat melting point| melts in the mouth.
We are one of only eight restaurants in the UK licensed to serve certified Kobe beef. This exclusive beef comes from Tajima Japanese Black cattle raised in Hyogo, Japan. Only around 3,000 cattle qualify each year, and most of the supply never leaves Japan. To earn the Kobe certification, every cut must meet strict standards. The cattle are fed a controlled diet of dried grasses along with soybean, corn and barley. They are slaughtered between 3 and 5 years of age and must achieve exceptional marbling with a meat quality score of 4 or 5. These criteria ensure the signature flavour, tenderness and richness that Kobe beef is known for. Our Kobe sirloin steak is prepared using a traditional Japanese method called Ishiyaki. We cook it on a volcanic stone heated to 400 degrees Celsius, which enhances the natural taste and gives a unique dining experience.

One of the world’s finest seaweed varieties, harvested from the nutrient-rich shallows of the Ariake Sea. With over 100 rivers feeding the area, the balance of fresh and salt water creates the perfect environment for exceptional nori. At high tide, the seaweed absorbs abundant minerals; at low tide, it’s exposed to sunlight, enhancing photosynthesis and deepening flavour. This natural cycle produces nori with unmatched softness, a rich aroma, and a concentrated umami taste. At RAI, we use premium Sanpuku Nori in our premium handrolls and throughout our Omakase experience to elevate every bite.

Aged Soy Sauce 04
Signature Ingredient

Aged Soy Sauce

RAI uses aged soy sauces ranging from 2 to an impressive 38 years old | matured in 100-year-old cedar barrels by the Okada family since 1753.
At RAI, we use a carefully curated selection of aged soy sauces, each chosen to complement the specific fish it accompanies. Every variety delivers a different balance of depth, salinity, and umami, allowing us to highlight the natural character of each ingredient. Our collection ranges from two-year to exceptionally rare thirty-year-aged soy sauces, all brewed in 100-year-old cedar barrels by the Okada family—master soy sauce makers since 1753. They remain the only producers in Japan using the traditional mushiro (woven-mat) method to create the koji base, resulting in a soy sauce with unmatched aroma, richness, and complexity. These artisan brews are used daily in our Omakase to elevate flavour with authenticity and precision.
Fresh Japanese Wasabi 05
Signature Ingredient

Fresh Japanese Wasabi

A rare plant that takes 3 years to grow, just 10- 20 cm long | Considered one of the hardest plants to grow on earth. | At RAI, we grate fresh Japanese wasabi just before serving it.
Wasabia Japonica, commonly known as fresh wasabi—has been an essential ingredient in Japanese cuisine since the 10th century. Unlike the harsh, artificial pastes widely found elsewhere, true fresh wasabi offers a clean, aromatic heat with gentle spice and a naturally herbal flavour. Because the plant is notoriously difficult to cultivate, thriving only in Japan’s cool, fast-flowing mountain streams, we source our wasabi directly from specialist growers in these regions. At RAI, we grate fresh wasabi at the table using a traditional sharkskin oroshi grater to release its delicate aroma and peak flavour, enhancing every sushi and omakase course with authentic Japanese nuance.
